My gr-grandma made this quite often in the summer when the cukes came in. Their farm was in south east Indiana on the Ohio River. I spent a lot of time there when I was a kid.

Ingredients

  • 2-3 Cucumbers, sliced
  • 1 whole lemon, juiced
  • salt & pepper to taste
  • 1 pkg artificial sweetener
  • 1/2 onion, sliced

Instructions

  1. 1
Slice cucumbers and onion into very, very thin slices. I use a grater for the cukes. Add salt and pepper to taste. Toss to mix all.
  2. 2
Place the slices in a colander over a bowl to drain for about 90 minutes.
  3. 3
Squeeze remaining liquid from the cuke mixture and place them in a bowl. Squeeze the juice of the lemon on to the cukes and add packet of sweetener (or teaspoon of sugar) and mix well. Add more sweetener as desired.
  4. 4
Cover and place in fridge to chill. Toss well before serving.
